Elevenses is meant to be a late-morning snack between breakfast and lunch. Traditionally across the UK it would be something sweet (a scone, muffin, biscuit) alongside tea or coffee. But in celeb chef Fergus Henderson's view, it should be seed cake and a glass of Madeira, "something to keep you steady" at 11am, as he's famously said. When we were in London a few years ago, we tried this version of elevenses at his St. John Hotel (which unfortunately has since closed). You can find it at some of his other properties though, like St. John Bread & Wine.
