We put this selection of Quebecois cheese (& fruits & cretons!) together after a trip to Marche Atwater. One cheese, from Fromagerie Hamel, was called Gre des champs, a firm & nutty raw cow's-milk cheese; the other was softer & more pungent. You can't go wrong with these regional cheeses--buy a few, get some bread & you have a delicious pre-dinner snack (or dessert). Perfection.
