The pizza at Roscioli was fresh, al dente, savory, oily, delicious. The crust, thin and crisp, was rigid enough to be held with no sag, yet there was a delicate chewiness to the interior. The red sauce, drizzled with oil, looked vibrant and tasted that way. The crust and the sauce are so perfectly matched that cheese would be a distraction.
